Spinach, quinoa puree

I hate talking about baby poop. No wait, I hate talking about baby poop to people that aren’t my son’s father or his pediatrician. Now don’t worry, this post isn’t about that. I just want to give you a little context!

My little baby has been a backed up these last few days. A real pain in the butt! Other than giving him loads and loads of prunes, I’ve been trying to find creative ways to maximize his fiber intake while still giving his diet a nice healthy variety.

  • For breakfast: Rolled oats, tsp of ground flaxseed, prune puree and 2 oz. of prune juice.
  • After nap milk feed.
  • Lunch: Spinach, pear and quinoa purée (see recipe below) and 2 oz of water to drink. Eggplant, plum and pear puree for dessert.
  • After nap milk feed.
  • Dinner: Green peas, corn and brown rice and 2 oz of water to drink. Peach puree for dessert.
  • Before bed milk feed.

Marko loved his very green spinach puree. I just hope his hearty appetite never gets picky on me… that would truly be heart-breaking!

spinach, pear and quinoa puree

Ingredients:

2 cups of baby spinach
1 pear, peeled, cored and quartered
1.5 cup of cooked quinoa

  1. Place pear and spinach in a steamer basket and let steam until pear pierces easily with a fork and spinach is wilted.
  2. Place quinoa and warm ingredients in a food processor and purée until desired consistency.
